I went to ROP Dental Assisting program 24yrs ago and am still in the field. Basically, you will learn the tooth numbers and surfaces of the teeth, learn how to take x-rays and mount them, mix cements, take impressions and pour them up, you'll learn about the different solutions and OSHA rules. When I finished the program I got hired right away, believe me it was not easy, I wanted to walk out of the office because it was hard for me, but I stuck it out and it's so second nature to me. I've been with the same doctor since I got out of school. ROP was free and all I had to do was buy a book and a uniform (but that was over 20yrs ago), I know there is a fee now but not nearly close to what UEI and other vocational schools charge. Wherever you end up working, you will learn how the doctor likes things, in school they may show you how to mix cement, but the doctor may prefer it a little thicker of thinnner, you have to go by the doctors way, so some of the things you learn in school may be very different in a doctors office.
